Madagascar Shrimp
Appetizer
Ingredients
1 cup of shredded cheddar cheese
1 cup mayonnaise
6 oz. tiny shrimp (41-45 count) or
minced shrimp
1 tsp. curry powder
2 small green onions, chopped
Pinch of ground coriander, cumin, and
cayenne (to taste)
6 English muffins (split in half)
Method of Preparation
- In a medium bowl, mix cheddar cheese,
mayo, shrimp, curry powder, onions,
coriander, cumin, and cayenne.
- Toast
muffins
- Spread shrimp mixture on muffin
halves and broil until bubbly. (Can
be made in advance and frozen before
broiling.)
- Garnish with chopped peanuts
and shredded coconut.
- Cut each muffin
into 4-6 pie shaped wedges and serve.
