Madagascar Shrimp Appetizer

Ingredients

1 cup of shredded cheddar cheese
1 cup mayonnaise
6 oz. tiny shrimp (41-45 count) or minced shrimp
1 tsp. curry powder
2 small green onions, chopped
Pinch of ground coriander, cumin, and cayenne (to taste)
6 English muffins (split in half)

Method of Preparation

  1. In a medium bowl, mix cheddar cheese, mayo, shrimp, curry powder, onions, coriander, cumin, and cayenne.
  2. Toast muffins
  3. Spread shrimp mixture on muffin halves and broil until bubbly. (Can be made in advance and frozen before broiling.)
  4. Garnish with chopped peanuts and shredded coconut.
  5. Cut each muffin into 4-6 pie shaped wedges and serve.
